Harvest Date: From September 11th to 24th. Vinification - Direct pressing and fermentation of 4 weeks at 15 degrees in stainless steel. There is no malolactic fermentation or lees. Maple syrup is added prior to filtration and bottling.

Ideal as an aperitif or with brunch. Accompanies cooked ham, omelets, pancakes or apple tatin. Cheese suggestions: cheddar and tomme such as Tomme du Manoir, Tomme d'Elles and Fromagerie Mirabel Cheddar.

Classique blanc de St-Jacques

The Classique blanc de St-Jacques is an assemblage of three varietals; Vidal, Seyval and Vandal Cliche. The Vidal conveys aromas of honey and pears, while adding weight and roundness. The Seyval brings finesse and Vandal Cliche on the other hand brings an overall freshness and notes of lime and apples.

Serve the Classique blanc de St-Jacques as an aperitif, or while enjoying poultry or fish. Don’t forget Québec’s great cheese selection!
