Harvest date: From October 1st to 15th. Vinification - The grapes are macerated cold for 24 to 48 hours before 4 weeks of alcoholic fermentation. The varieties are vinified separately in stainless steel. 20% of the total assembly is aged in French oak for 6 months. A finalizing of aging of less than a year is done on the lees in stainless steel tanks, accompanied by a stirring of the lees (bâtonnage.
