Fortified wine, Red16,5 % alc/vol
Harvest Date: From October 1st to 15th. Vinification - At harvest in early October, the grapes are crushed, destemmed and vatted. We proceed with the alcoholic fermentation and chaptalize with maple syrup to reach a 15% potential of alcohol. We then mute with grain alcohol, which has been previously enhanced in oak barrels. The wine undergoes oxidation for about a year. At the end of the aging process, maple syrup is added to slightly sweeten the product. Tasting and conservation - Dark with amber tints. Complex aromas of ripe fruit and maple recall the character of Ports. Its smooth consistency reveals notes of chocolate, hints of roasting and caramelization.
Food wine pairing:
Digestive wine. Pairs well with chocolate desserts, dark chocolate, figs and walnuts. Cheese suggestions: Old cheddar and blue such as Le Bleu d’Élizabeth, Troubadour and Hermite.
