Icewine, White10,9% alc/vol
Harvest date: From December 15th to January 10th. Vinification - The naturally frozen grapes are pressed in whole bunches between -8 and -12 degrees for about 12 hours. The highly concentrated sugary juice ferments for months at 13 degrees. The fermentation is stopped when the balance between sugar and acidity alcohol is perfect.
Food wine pairing:
Dessert wine. Accompanies wonderfully foie gras, crème brûlée or dried fruit and nuts. Cheese suggestions: Firm, washed rind cheeses such as old cheddar and L’Hercule de Charlevoix, Louis d’Or and Cheddar de St-Guillaume.
