Prestige wine, White12,5% alc/vol
Harvest date: From September 11th to 24th. Vinification - A careful selection of our best white grapes. Pressing of whole grape bunches in French oak barrels. Alcoholic fermentation of a few weeks at a temperature of 14 degrees. The wine remains in the barrels and fermentation will be done in the spring. Aging of 6 to 9 months is accompanied by a stirring of the lees (bâtonnage) bringing fattiness and roundness. The final assembly is done just before bottling. The wine is lightly filtered to keep its character.
Food wine pairing:
Pairs well with veal, fish and seafood. Cheese suggestions: Semi-soft washed rind, such as Gré des champs, Sieur corbeau, Kénogami.
Serve between 11 and 13°C
